Chicken Fettuccine with Sun dried Tomatoes

 Sometimes I have a lazy day and I don't feel like standing in the kitchen for hours. I need something that I can whip up and cook in under 30 mins. At the same time I'm such a foodie I can't give up on the homemade comfort of a great tasting dish. I'm lover of all things pasta and bread. Both of these things are not good if you're on a diet but hey, I can't do this on a cheat day and be content. You can always switch out the pasta for wheat or bread for veggies. So get lazy with me and try out this comfort food.
The picture above is with a light amount of sauce. 
The recipe below is for creamy amount.
 I used one chicken breast and this made two plates of pasta, but you can use more. If you're cooking for a group of people (4-5). I would use 3 or 4 pieces of chicken breast fillets.

Recipe:

Prep Work: 20 mins
Chicken:
1-2 chicken breast fillets or more
1/4 teaspoon of garlic powder
1/4 teaspoon of pepper
1/4 teaspoon of salt
Let marinate for 1 hour
Cooking- Grill or stove top
1 tablespoon of olive oil
5 mins each side

Pasta:
4 to 8 Oz Fettuccine pasta
4 cups of Water - bring to boil in pot w/ 1 tablespoon of olive oil
Cooking-
Let cook for 10 mins max - aldente

Sauce:
1 cup of Alfredo sauce 
1/4 teaspoon of garlic, minced
1/4 teaspoon or 4 sun-dried tomatoes
1/4 a cup of paremsean cheese

COOKING: 
Add minced garlic and sun-dried tomatoes with olive oil to hot pan and cook for 2 mins tossing the spices.

Add Alfredo sauce - cook for 10 mins on low heat

Add pasta/chicken breast/ and 1/4 a cup of the pasta water to the sauce.

Warm for 5 mins on medium heat




 Pre season your chicken for 1 hour with salt, pepper, and garlic season.
 Cook on each side for 5 mins. The first time I made this I did it on the grill so it only took 6 minutes to cook.
 Cut chikcen into strips and set it aside.
 1/4 teaspoon of garlic, minced into a pan with a little olive oil

 Add 4-5 sun dried tomatoes
 I only use 1/2 a cup of Alfredo sauce, but you can use more.

 Cook pasta for 10 mins max - you will fininsh cooking it in the sauce
LIFE HACK: Use the pasta water in the sauce - only 1/4 a cup or 1/2 a cup depends on how creamy you want the sauce. I like mine light on sauce so I use 1/4 but in this recipe I use 1/2 a cup because I know a lot of people like it creamy. The pasta water helps bind the pasta to the sauce so you get flavor throughout the pasta.


 Add pareasean cheese!  1/4 a cup.
 Add your chicken strips

You're done!
If you like this recipe you might want to try to make your own Alfredo sauce from scratch or sun dried tomatoes. For now I'll stick with the store bought because I can store it easily and reuse.
