BEST Homemade Enchiladas & Red Sauce

When I was growing up I loved Mexican food. I lived in a house where we did not each out much. If I wanted something, I asked my aunt, and she cooked it. Everything was homemade and from scratch. So I guess that is were my obsession with high end restaurants come from because I love everything to be homemade. I'm sharing one of my Aunt's best recipes. From my family to yours...I hope you enjoy it.


  1. I would suggest boiling the chicken first.
  2. Then make your red sauce.
  3. While you are doing those two things start frying your tortillas.
SHOPPING LIST:
- 1 big bag of cheese (32oz)
- 1 Bottle of La Victoria's Green Taco Sauce
- 3 Chicken Boulion Cubes
-30 Torillas (corn)
-3 Chicken Breast
- Chicken Broth
-2 cans Hunts tomatoes sauce
- Olive Oil



THE RECIPE: rED SAUCE

2 can of Hunt's tomato sauce (29oz)
1 bunion cube (Chicken)
2 tbs Salt
2 tbs Pepper

Cooking Instructions
- boil over the stove for 10 mins until ingredients are mixed together


    THE RECIPE | ENCHILADAS

    30 pack of white corn tortillas 
    2 cups of Olive Oil
    1 Fry tortillas ( I use 18-20)                                                                                                              *You will dip the tortillas in red sauce later


    3 Chicken breast boiled in chicken broth (2-3 cans)  or two 16oz boxes                                      -with tbsp of salt and tbsp of pepper, add 1-2 bullion cube (Chicken)                                                                      *Cook: boil for at least 25 mins at 175 degrees.
    Mix the chicken breast with the red sauce

    Stuff tortillas|
    - 1 table spoon of chicken breast 
    - 1 table spoon of  green sauce
    - 2 table spoons of mixed cheese ( any flavor)                                                                           Roll the ingredients together, aligning one after the other                                                          Top off the sheet of enchiladas with cheese and sauce                                                              *Bake at 375 degrees for 1 hour
